Vanie Padayachee’s menus are seasonal – the summer menu offering fresh flavorful dishes such as blackened calamari with a warm niçoise salad; maple syrup glazed duck breast on fried greens, with butternut and lemon grass purée, and plum dressing; and pomegranate parfait with strawberries marinated in aged balsamic vinegar and black pepper.

Vanie Padayachee

Originally from Durban, Vanie Padayachee’s parents provided her with culinary inspiration and an inherent knowledge of and love of spices.

Vanie was fortunate enough to spend six years working under highly acclaimed chef Margot Janse at Le Quartier Français, and her return to the valley of Franschhoek was preceded by a stint at Phantom Forest in Knysna.
